Carrot cake baked oats

A lot of you have been curious about what we are feeding our little one. One thing she has been loving is our baked oats! You don't need to be little to enjoy this, and the recipe is very easy. And it's packed with healthy goodies like carrots and cottage cheese! One batch feeds her for breakfast for the week (...for now)!

Kitchen Tools

  • One 9"x9" baking dish

  • One box grater

  • One microplane


Ingredients (makes 1 pancake, good for 2 people)

  • 2 ripe bananas

  • 1/4 cup Greek yogurt

  • 1/3 cup cottage cheese

  • 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp ground fresh ginger (PRO TIP: freeze your ginger and its so much easier to grind on the microplane!)

  • 1/4 tsp ground cardamom

  • 3/4 cup oat milk (or whatever milk you prefer)

  • 1 cup carrots (shredded with a box grater)

  • 1&1/4 cup rolled oats


Instructions

  1. Preheat oven to 375 degrees Fahrenheit.

  2. Spray your baking dish with oil or rub the sides with butter.

  3. In a large bowl, mash your bananas.

  4. Add the yogurt, baking powder, cinnamon, ginger, and cardamom. Mix to combine.

  5. Add in the oat milk and shredded carrots. Mix to combine.

  6. Add the rolled oats and cottage cheese. Mix to combine.

  7. Pour the mixture into the dish and bake for 30 minutes.

  8. Once cooled, feed to your little Food Critic and enjoy!
